Here in California’s BBQ Capital, our renowned Santa Maria Style Barbecue has given rise to an increasingly famous offshoot—the grilled tri-tip sandwich!

Indeed, tri-tip is a unique cut popularized here in the Santa Maria Valley as part of the traditional Santa Maria Style Barbecue menu. But its more informal incarnation—the sandwich—is now drawing crowds with its mouthwatering flavors and distinctive seasoning, particularly when grilled over red oak.

You can find this local specialty all over the valley at Woody’s Butcher Block, Shaw’s Steakhouse and elsewhere.

It’s just another way that the Santa Maria Style Barbecue tradition has managed to maintain its roots while branching off into other delicious directions.
