Simple Santa Maria Green Salad

Our barbecue is always served with fresh green salad and grilled garlic bread. These sides perfectly accompany the dense, spicy tri-tip and beans.

  • 2 tbsp red onion minced
  • 1 1/2 tbsp red wine vinegar
  • 2 tsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp finely ground black pepper
  • 1/4 tsp Dijon mustard
  • 6 cups curly leaf lettuce torn
  • 1/4 cup red onion sliced thin
  • 1 pint cherry tomatoes halved


  • Combine minced onion and vinegar in a small bowl and let stand for 5 minutes.
  • Add oil, salt, pepper and mustard to the onion and vinegar, whisk well.
  • Place the lettuce, sliced onion and tomatoes in a large bowl and drizzle with dressing. Gently toss to combine.
